A Site for Pure Science: The Food Safety Consortium
How can food scientists keep abreast of developing food safety research? By logging on to the Food Safety Consortium (FSC) Web site at www.uark.edu/depts/fsc.
Established by Congress in 1988 through a Special Cooperative State Research Service Grant, the Food Safety Consortium consists of researchers from the University of Arkansas, Iowa State University, and Kansas State University who have joined together to conduct extensive investigations into safety issues facing the poultry, beef and pork production industries. The site includes updates on the latest FSC research, food safety current events, a personnel directory, annual reports, and a calendar of upcoming events. It also features the Food Safety Consortium Newsletter, which this month offers stories on the effect of new Federal irradiation regulations, advancements in the early detection of Salmonella, and research on how to keep harmful bacteria out of cooked and ready-to-eat meat. In addition, a link to the Food Safety Project at Iowa State University gives scientists updates on food safety research being performed at that school.
