The Accellis C70 Super Oven
If you missed it, it was the hit of the recently held National Restaurant Show at McCormick Place in Chicago: The Accellis C70 fast-cooking commercial oven. It can cook gourmet-quality food for a banquet room full of people faster than you can say Bam!
We know. FoodTechSource was there at the Drake Hotel banquet. We tasted the food. And it was superb!
The revolutionary Accellis, a commercial-grade combination convection/microwave oven from Maytag® (marketed under the Blodgett® trademark) is a culinary wonder. It can cook a live, 1-1/4 pound lobster in 145 seconds, 12 shrimp in 45 seconds, or a single-topping, seven-inch pizza in just 70 seconds! It cooks rolls and breads, crisps chicken, broils and even roasts. And the tough microwave texture is virtually nonexistant.
The Accellis, which cooks foods reportedly up to seven times faster than traditional methods, uses a patented rapid-cook technology that combines a controlled, smoothly flowing field of hot air with microwave energy. And although it offers a programmable interface with up to 64 or 128 menu settings (seemingly ideal for the fast food market), the type and time of even these presets can be manipulated to accomodate each cooks unique demands. Throughput capacity: up to 160 products an hour!
Though still in the development stage, the Accellis is expected to be available for retail within the year.
